- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 250ml heavy cream
- 50g powdered sugar
- 1 teaspoon vanilla extract
- 200g fresh strawberries, hulled and sliced
- Additional powdered sugar for dusting
Instructions
- Prepare the Oven and Pan:
- Preheat your oven to 180°C (350°F).
- Line a 10×15 inch jelly roll pan with parchment paper.
- Make the Sponge Cake:
- In a large mixing bowl, beat the eggs and sugar together until thick and pale (about 5-7 minutes).
- Gently fold in the vanilla extract.
- Sift the flour and baking powder together, then gradually fold into the egg mixture until well incorporated.
- Bake the Sponge Cake:
- Spread the batter evenly in the prepared pan.
- Bake for 10-12 minutes, or until the cake springs back when lightly pressed.
- Roll the Cake:
- While still warm, turn the cake out onto a clean, sugared kitchen towel.
- Peel off the parchment paper and roll the cake with the towel from the short end.
- Let it cool completely in the rolled form.
- Prepare the Filling:
- In a large bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
- Gently fold in the sliced strawberries.
- Assemble the Roll:
- Carefully unroll the cooled sponge cake.
- Spread the strawberry cream filling evenly across the cake.
- Re-roll the cake without the towel.
- Final Touches:
- Place on a serving platter.
- Dust with powdered sugar.
- Garnish with extra whipped cream and whole strawberries, if desired.
