Instructions

  1. Prepare the Oven and Pan:
    • Preheat your oven to 180°C (350°F).
    • Line a 10×15 inch jelly roll pan with parchment paper.
  2. Make the Sponge Cake:
    • In a large mixing bowl, beat the eggs and sugar together until thick and pale (about 5-7 minutes).
    • Gently fold in the vanilla extract.
    • Sift the flour and baking powder together, then gradually fold into the egg mixture until well incorporated.
  3. Bake the Sponge Cake:
    • Spread the batter evenly in the prepared pan.

    • While still warm, turn the cake out onto a clean, sugared kitchen towel.
    • Peel off the parchment paper and roll the cake with the towel from the short end.
    • Let it cool completely in the rolled form.

    • In a large bowl, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.
    • Gently fold in the sliced strawberries.
  6. Assemble the Roll:
    • Carefully unroll the cooled sponge cake.
    • Spread the strawberry cream filling evenly across the cake.
    • Re-roll the cake without the towel.
  7. Final Touches:
    • Place on a serving platter.
    • Dust with powdered sugar.
    • Garnish with extra whipped cream and whole strawberries, if desired.
