- 1 cup boiling water
- 1 cup cold water

- 2 cups fresh strawberries, diced
- 2 cups mini marshmallows
- 1 1/2 cups crispy rice cereal

- Prepare the gelatin base: In a medium bowl, dissolve the strawberry gelatin in 1 cup of boiling water. Stir slowly until completely dissolved. Add 1 cup of cold water and mix well. Set it aside to cool but not fully set. You want it slightly thickened, like syrup.
- Cream the cheese mixture: In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. This step is important. Take your time so there are no lumps. Stir in the vanilla extract for that warm, sweet aroma.
- Combine the creamy and fruity layers: Pour the cooled gelatin into the cream cheese mixture while beating gently. The color will turn into a soft, rosy pink.
- Fold in the fluff: Fold in the whipped topping using a spatula and light strokes so the mixture stays airy and fluffy.
- Add the texture and sweetness: Fold in the diced strawberries and mini marshmallows. Finally, fold in the crispy rice cereal just before chilling to keep that signature crackle texture.
- Chill and set: Refrigerate for at least 2–3 hours, or until fully set and chilled. The flavors will meld together beautifully during this time.
