Description

This slow cooker sundried tomato chicken is a flavorful and easy meal, perfect for any night of the week.


Ingredients

  • 750800 grams chicken breast (about 4 small fillets)
  • 1 tablespoon oil from the jar of sundried tomatoes (or olive oil)
  • 1 cup chicken stock
  • 1 tablespoon cornflour
  • 4 cloves garlic (minced)
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon mixed herbs
  • ½ cup sundried tomato strips
  • 2 tablespoons nutritional yeast
  • ½ cup dairy free cream
  • salt and pepper to taste
  • 60 grams / 2 cups baby spinach (optional)
  • Fresh basil leaves (to serve)

Instructions

  1. Heat the oil from the jar of sundried tomatoes in a frying pan over medium heat. Season the chicken breasts lightly with salt and pepper, then sear for 2–3 minutes on each side until golden. The chicken does not need to be cooked through at this stage. Transfer to a plate and set aside.
  2. In the bowl of the slow cooker, whisk together the chicken stock and cornflour until smooth. Add the minced garlic, smoked paprika, onion powder, mixed herbs, and a little extra salt and pepper. Stir to combine.
  3. Place the seared chicken breasts into the slow cooker and spoon over the sauce. Scatter the sundried tomato strips over the top.
  4. Cover with the lid and cook on low for 2–3 hours, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  5. Once cooked, remove the chicken from the slow cooker and set aside on a plate.
  6. With the slow cooker still on low or switched to warm, stir through the nutritional yeast and dairy free cream until the sauce is smooth and creamy. Taste and adjust seasoning if needed.
  7. Add the baby spinach and return the chicken to the slow cooker. Spoon the sauce over the chicken and replace the lid for a few minutes, just until the spinach has wilted and everything is heated through.
  8. Serve warm with pasta, rice, or dairy free mashed potatoes. Garnish with fresh basil leaves just before serving.
