- 3 to 4 pounds chuck roast
- 2 large yellow onions, thinly sliced
- 2 cups beef broth
- 1 packet French onion soup mix
- 1 tablespoon Worcestershire sauce
- 3 cloves garlic, minced
- 2 tablespoons butter
- 4 sprigs fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 cup shredded Gruyère cheese (optional)
Instructions
- Pat the chuck roast dry with paper towels and season it on all sides with salt and black pepper.
- Heat a skillet over medium-high heat and sear the roast for 2 to 3 minutes per side until browned, if desired.
- Spread the sliced onions in the bottom of the slow cooker and add the garlic, butter, and thyme.
- Place the roast on top of the onions.
- Pour in the beef broth, then sprinkle the French onion soup mix over the roast and add the Worcestershire sauce.
- Cover and cook on low for 8 to 9 hours or on high for 5 to 6 hours, until the beef is fork-tender.
- Remove the roast carefully and transfer it to a platter.
- Whisk together the cornstarch and water in a small bowl, then stir it into the hot liquid in the slow cooker to thicken the gravy.
- Spoon the onions and gravy over the roast.
- Top with shredded Gruyère cheese if using, and let it melt before serving.
Notes
- This recipe pairs well with crusty bread for dipping in the gravy.
- Leftovers can be stored in the refrigerator for up to 3 days.
