Description

This creamy chicken penne pasta is a delicious and hearty meal, perfect for busy weeknights.


Ingredients

  • 16 oz skinless boneless chicken breast
  • 5 oz cream cheese
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 1 cup heavy whipping cream
  • 2 cups chicken broth
  • ¾ cup freshly grated parmesan cheese, plus extra for serving
  • 8 oz penne pasta, uncooked
  • 12 tbsp fresh parsley, chopped

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the cream cheese, butter, garlic, onion powder, Italian seasoning, salt, and black pepper.
  3. Pour in the heavy cream and chicken broth.
  4. Cover and cook on Low for 4–5 hours or on High for 2–3 hours, until the chicken is tender.
  5. Remove the chicken, shred with two forks, and return it to the sauce.
  6. Add the uncooked penne pasta and parmesan cheese, stirring to combine.
  7. Cover and cook on High for 20–30 minutes, until the pasta is tender.
  8. Stir once more before serving.
  9. Serve hot, garnished with extra parmesan or parsley if desired.

Notes

  • This dish can be prepared in advance and reheated.
  • For added flavor, consider sautéing the garlic before adding it to the slow cooker.
