- 3 cloves fresh garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 large sweet onion, chopped
- 1 (28 oz) can whole tomatoes, crushed
- 1 cup coconut milk or heavy cream
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon garam masala
- 1 tablespoon unsalted butter
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Marinate the chicken: In a bowl, mix yogurt, garlic, ginger, cumin, coriander, and salt. Coat the chicken evenly and cook for another minute. Then add cumin, coriander, garam masala, and turmeric; toast slightly.
- Incorporate tomatoes: Add crushed tomatoes and simmer for about 10 minutes.
- Mix in coconut milk: Slowly pour in coconut milk or cream; bring to a gentle simmer.
- Cook chicken: Add marinated chicken to the sauce. Cover and cook on low heat for 20-25 minutes until fully cooked.
