Description

A refreshing slaw with crunchy vegetables and a creamy peanut dressing.


Ingredients

Scale
  • 4 cups green cabbage, shredded
  • 1 cup carrots, grated
  • 1 red bell pepper, thinly sliced
  • 4 green onions, chopped (white and green parts)
  • 1/2 cup natural peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 2 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • Cilantro (optional), for garnish

Instructions

  1. Shred the cabbage into thin strips using a sharp knife or mandoline.
  2. Grate the carrots and slice the red bell pepper.
  3. In a medium bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, and sesame oil until smooth.
  4. In a large mixing bowl, combine cabbage, carrots, bell pepper slices, and green onions.
  5. Drizzle dressing over the veggies and toss gently until evenly coated.
  6. Cover and refrigerate for at least 30 minutes for optimal flavor infusion before serving.

Notes

  • For a spicy kick, add some chili flakes to the dressing.
  • This slaw can be made a day in advance for a quick side dish.
