Description

Ingredients

  • 8 oz elbow macaroni
  • 2 large sweet onions, thinly sliced
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup heavy cream or milk
  • 1 cup Gruyère cheese, shredded
  • ½ cup Parmesan cheese, grated
  • ¼ cup all-purpose flour
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a skillet, melt butter over medium heat. Add sliced onions and sauté until caramelized (15-20 minutes). Stir occasionally.
  2. Add minced garlic, thyme, and bay leaf. Cook for about 1 minute until fragrant.
  3. Sprinkle flour over the caramelized onion mixture and stir for 2 minutes to form a paste.
  4. Gradually whisk in beef broth and cream/milk; stir until thickened (5-7 minutes).
  5. Remove from heat, mix in cooked macaroni, Gruyère, and Parmesan until gooey.
  6. Preheat the oven to 400°F (200°C), transfer the mixture to a baking dish, top with more cheese, and bake for 20-25 minutes until golden brown.

Notes

  • This dish can be topped with breadcrumbs for extra crunch.
