- 8 oz elbow macaroni
- 2 large sweet onions, thinly sliced
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup heavy cream or milk
- 1 cup Gruyère cheese, shredded
- ½ cup Parmesan cheese, grated
- ¼ cup all-purpose flour
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a skillet, melt butter over medium heat. Add sliced onions and sauté until caramelized (15-20 minutes). Stir occasionally.
- Add minced garlic, thyme, and bay leaf. Cook for about 1 minute until fragrant.
- Sprinkle flour over the caramelized onion mixture and stir for 2 minutes to form a paste.
- Gradually whisk in beef broth and cream/milk; stir until thickened (5-7 minutes).
- Remove from heat, mix in cooked macaroni, Gruyère, and Parmesan until gooey.
- Preheat the oven to 400°F (200°C), transfer the mixture to a baking dish, top with more cheese, and bake for 20-25 minutes until golden brown.
Notes
- This dish can be topped with breadcrumbs for extra crunch.
