Description

A delicious and easy recipe for gluten-free cornbread muffins filled with hot dogs, perfect for snacks or parties!


Ingredients

  • 1 box gluten-free cornbread mix
  • 1 package gluten-free hot dogs (6 to 8)
  • 1 can gluten-free cooking spray (coconut or olive oil)

Instructions

  1. Preheat oven according to gluten-free cornbread mix directions.
  2. Spray mini muffin pan with cooking spray.
  3. Combine all of the ingredients to the gluten-free cornbread mix according to the box directions. Dairy-free use almond, cashew or coconut milk when making the cornbread mix.
  4. Fill the muffin pans with the gluten-free cornbread batter.
  5. Cut hot dogs into small bite-sized pieces.
  6. Place hot dog pieces into the center of each mini muffin pan filled with gluten-free cornbread batter.
  7. Cook according to the box directions for mini muffins (about 15-17 minutes).
  8. Enjoy!
