- 16 pieces large shrimp, peeled and deveined
- 1 slices of baguette or crusty bread
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 lemon, juiced

- 2 tablespoons chopped fresh parsley
- 1 cup shredded mozzarella cheese
- optional red pepper flakes for a spicy kick
Instructions
- Prepare the Bread: Preheat the oven to 375°F (190°C). Slice the baguette into even slices, about 1 inch thick. Arrange the slices on a baking sheet.
- Make the Garlic Butter: In a small saucepan over low heat, melt the butter. Add minced garlic and cook until fragrant, about 1-2 minutes. Stir in olive oil, lemon juice, salt, and pepper.
- Cook the Shrimp: Heat a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from heat and toss with chopped parsley and a pinch of red pepper flakes, if using.
- Assemble the Toasts: Brush each slice of bread with the garlic butter mixture. Place a few shrimp on each slice. Sprinkle with shredded mozzarella cheese.
- Bake: Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven and let cool slightly. Garnish with additional parsley before serving.
