Description

Delicious garlic butter shrimp toasts topped with mozzarella cheese.

Ingredients

Scale
  • 16 pieces large shrimp, peeled and deveined
  • 1 slices of baguette or crusty bread
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • to taste salt and pepper
  • 2 tablespoons chopped fresh parsley
  • 1 cup shredded mozzarella cheese
  • optional red pepper flakes for a spicy kick

Instructions

  1. Prepare the Bread: Preheat the oven to 375°F (190°C). Slice the baguette into even slices, about 1 inch thick. Arrange the slices on a baking sheet.
  2. Make the Garlic Butter: In a small saucepan over low heat, melt the butter. Add minced garlic and cook until fragrant, about 1-2 minutes. Stir in olive oil, lemon juice, salt, and pepper.
  3. Cook the Shrimp: Heat a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from heat and toss with chopped parsley and a pinch of red pepper flakes, if using.
  4. Assemble the Toasts: Brush each slice of bread with the garlic butter mixture. Place a few shrimp on each slice. Sprinkle with shredded mozzarella cheese.
  5. Bake: Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve: Remove from the oven and let cool slightly. Garnish with additional parsley before serving.

Notes

  • For extra flavor, you can add a dash of white wine to the garlic butter sauce.
  • Ensure the bread is toasted until golden brown for a delightful crunch.
  • Adjust the amount of garlic to your preference; more garlic can enhance the flavor.
  • Serve immediately for the best taste and texture.
