  • 2 tbsp Cajun seasoning
  • 2 cups cooked white rice (for serving)
  • 1 tbsp olive oil

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add chopped onions, bell peppers, and celery; sauté until softened.
  3. Stir in sliced chicken sausage and cook until browned.
  4. Mix in Cajun seasoning and diced tomatoes; cook for an additional 5 minutes.
  5. Gradually pour in the chicken stock while stirring; bring to a gentle boil.
  6. Reduce heat and let simmer uncovered for about 30 minutes.
