- 1 lb smoked chicken sausage, sliced
- 1 cup bell peppers (mixed colors), chopped
- 1 cup sweet onions, finely chopped
- 1 cup celery, chopped
- 1 can (14 oz) diced tomatoes with juices
- 4 cups chicken stock (low-sodium)
- 2 tbsp Cajun seasoning
- 2 cups cooked white rice (for serving)
- 1 tbsp olive oil
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat.
- Add chopped onions, bell peppers, and celery; sauté until softened.
- Stir in sliced chicken sausage and cook until browned.
- Mix in Cajun seasoning and diced tomatoes; cook for an additional 5 minutes.
- Gradually pour in the chicken stock while stirring; bring to a gentle boil.
- Reduce heat and let simmer uncovered for about 30 minutes.
- Serve over cooked rice and garnish with fresh parsley if desired.
