Doritos Chicken Casserole

Description

This creamy chicken casserole is layered with crushed Doritos and topped with cheese for a deliciously crunchy dish.


Ingredients

  • 1 medium bag Doritos, crushed, divided
  • 3 cups cooked chicken, shredded or cubed
  • 1 and 1/4 cups sour cream
  • 2 (10 ounce) cans cream of chicken soup
  • 1 (12 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes, drained
  • 1 (4 ounce) can chopped chiles
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 2 and 1/2 cups shredded sharp cheddar cheese, divided

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Open the Doritos bag to release the air from the bag and, closing the top of the bag, squeeze to crush the Doritos into small bite-sized pieces. If you like, you can set aside a few whole Doritos for garnishing each plate.
  3. Spread half of the crushed Doritos into the bottom of prepared baking dish. Set the remaining Doritos aside. You will need them later.
  4. In a large mixing bowl, combine cooked chicken, sour cream, drained canned corn, 1 and 1/2 cups of the shredded cheddar cheese, drained tomatoes, green chiles, cream of chicken soup, ground cumin, garlic powder and chili powder. Stir until combined.
  5. Spread the chicken mixture on top of the crushed Doritos. I find that the easiest way to do this is to scoop it out place one dollop in each corner and two in the middle. Then, spread it out with a spoon. Otherwise, it’s tricky to get the Doritos to stay in place!
  6. Sprinkle remaining Doritos on top, followed by the remaining cheese. Now, you’re ready to pop this creamy chicken casserole in the oven.
  7. Bake in 350°F oven for 25 minutes. Cheese will be melted and the Doritos on top will be nice and crunchy when it’s done. It should also be bubbling at the edges.

Notes

  • For extra flavor, consider adding some chopped green onions or jalapeños on top before baking.
