Description

A hearty and delicious turkey pumpkin chili, perfect for chilly days.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 pound ground turkey
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (15 oz) pumpkin purée
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cups chicken broth
  • 4 ounces cream cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, and bell pepper. Cook until softened, about 5 minutes.
  2. Add ground turkey and cook until browned, breaking it up as it cooks.
  3. Stir in chili powder, cumin, paprika, cinnamon, salt, and pepper. Mix in the pumpkin purée.
  4. Add diced tomatoes, white beans, and chicken broth. Stir and bring to a simmer.
  5. Simmer for 20 minutes, stirring occasionally.
  6. Add cream cheese and stir until melted and fully incorporated.
  7. Serve hot with your favorite toppings like cheese, sour cream, or cilantro.
