- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 pound ground turkey
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cinnamon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (15 oz) pumpkin purée
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) white beans, drained and rinsed
- 2 cups chicken broth
- 4 ounces cream cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, garlic, and bell pepper. Cook until softened, about 5 minutes.
- Add ground turkey and cook until browned, breaking it up as it cooks.
- Stir in chili powder, cumin, paprika, cinnamon, salt, and pepper. Mix in the pumpkin purée.
- Add diced tomatoes, white beans, and chicken broth. Stir and bring to a simmer.
- Simmer for 20 minutes, stirring occasionally.
- Add cream cheese and stir until melted and fully incorporated.
- Serve hot with your favorite toppings like cheese, sour cream, or cilantro.
