Description

A delicious and hearty soup made with Italian sausage, tortellini, and spinach in a creamy broth.


Ingredients

Scale
  • 1 pound ground Italian sausage
  • 1 cup diced carrots
  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • ¼ cup all purpose flour
  • 2 teaspoons Italian seasoning
  • ½ teaspoon mustard powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 5 cups chicken stock
  • 1 cup heavy cream
  • 2 cups spinach
  • 2 cups frozen tortellini
  • ½ cup parmesan cheese

Instructions

  1. Heat a heavy bottom pot on medium high heat and add the Italian sausage, carrots and onions until sausage is cooked through and veggies are soft, about 8-10 minutes.
  2. Add in the minced garlic and cook another 30 seconds.
  3. Sprinkle in the flour and stir until combined.
  4. Add in the ground Italian seasoning, mustard, salt, and pepper.
  5. Stir in the chicken stock and let simmer for 1-2 minutes as it thickens.
  6. Stir in the heavy cream and add in the frozen tortellini, bring to a boil then reduce the heat to simmer.
  7. Add in the spinach and parmesan cheese, let simmer on low until spinach wilts and cheese is melted, about 1-2 minutes.

  • This soup is great served with crusty bread.
  • You can substitute the ground sausage with turkey sausage for a lighter option.
