Ingredients
Scale
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- 1 teaspoon lemon juice
- ½ teaspoon paprika
- to taste Salt and pepper
- 2 pounds potatoes, peeled and cubed
- 4 tablespoons butter
- ½ cup milk
- Fresh parsley, for garnish
Instructions
- Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
- While the potatoes are boiling, heat olive oil in a large skillet over medium heat. Add the shrimp and season with paprika, salt, and pepper. Cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
- In the same skillet, add minced garlic and cook until fragrant, about 1 minute.
- Pour in chicken broth and deglaze the pan, scraping up any bits stuck to the bottom. Add the heavy cream and lemon juice, stirring to combine. Simmer until the sauce thickens, about 3-5 minutes.
- Return the cooked shrimp to the skillet, stirring to coat in the sauce. Cook for an additional 2-3 minutes to heat through.
- Drain the cooked potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.
- Spoon the creamy shrimp mixture over a generous serving of mashed potatoes. Garnish with fresh parsley for a touch of color.
Notes
- This dish pairs well with a green salad or steamed vegetables.
