Instructions
- Dice the ripe tomatoes and onion; mince the garlic.

- Stir in the diced tomatoes and cook until they soften, about 10 minutes.
- Add the vegetable broth, bringing everything to a gentle simmer. Let it bubble for about 10 minutes.
- Carefully blend the mixture until smooth, then stir in creamy cottage cheese. Blend again until silky.
- Add salt and pepper to taste, adjusting as needed.
- Serve hot, topped with fresh basil for a pop of color and flavor.
