Description

A deliciously creamy pasta dish made with Cajun-seasoned chicken and fettuccine.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 oz (225g) fettuccine pasta
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: Garlic bread for serving

Instructions

  1. Prepare the Chicken:
    • Rub the chicken breasts with Cajun seasoning, ensuring they are evenly coated.
    • Heat olive oil in a large skillet over medium heat.
    • Add the chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and golden brown.
    • Remove the chicken from the skillet, let it rest for a few minutes, then slice it into strips.
  2. Cook the Pasta:
    • Boil a large pot of salted water and cook the fettuccine pasta according to package instructions until al dente.
    • Drain the pasta and set aside.
  3. Make the Creamy Sauce:
    • In the same skillet used for the chicken, melt butter over medium heat.
    • Add minced garlic and cook for about 1 minute until fragrant.
    • Pour in the heavy cream and bring to a gentle simmer.
    • Stir in Parmesan cheese, smoked paprika, salt, and pepper.
    • Allow the sauce to thicken slightly, stirring occasionally.
  4. Combine the Ingredients:
    • Add the cooked pasta to the skillet with the sauce, tossing to coat evenly.
    • Top with sliced Cajun chicken.
    • Garnish with chopped parsley.
  5. Serve:
    • Serve hot, alongside garlic bread if desired.

Notes

  • Adjust the level of Cajun seasoning to taste if you prefer a spicier dish.
  • For a richer sauce, consider adding a bit more Parmesan cheese.
  • Enhance the flavor with a squeeze of lemon juice before serving.
  • Freshly grated Parmesan cheese works best for a creamy texture.
