Description

Delicious and fluffy cottage cheese pancakes, perfect for breakfast!


Ingredients

  • 1 cup cottage cheese
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 tablespoons melted butter
  • 1/2 tablespoon white sugar
  • 3 large eggs (lightly beaten)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Whisk together the flour and baking powder in a medium sized bowl. Mix in the cottage cheese, butter, sugar, eggs and vanilla, mix together completely.
  2. Heat a well oiled large skillet over medium heat or a griddle.
  3. Pour 1/3 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface.
  4. Flip with a spatula, and cook until browned on the other side.
