Cheesy Chicken and Biscuit Casserole

Description

A comforting casserole featuring chicken, vegetables, and a cheesy biscuit topping.


Ingredients

Scale
  • 11 oz box Red Lobster Cheddar Bay biscuit mix
  • 1 cup shredded cheddar
  • 2 cups milk
  • 1/4 cup melted butter
  • Fresh chopped parsley
  • 4 cups shredded rotisserie chicken
  • 2 cups frozen chopped spinach
  • 2 cups frozen mixed vegetables
  • 8 oz jar diced pimentos, drained
  • 10 oz condensed cream of chicken soup
  • 10 oz condensed cream of mushroom soup
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder

Instructions

  1. Preheat oven to 350F.
  2. Dump the shredded chicken, frozen chopped spinach, frozen mixed vegetables, diced pimentos, cream of chicken, cream of mushroom, 1 cup of milk, salt, pepper, garlic powder and onion powder into a large mixing bowl.
  3. Stir all of the ingredients together until well combined.
  4. Spray a 9 x 13 inch baking dish well with cooking spray.
  5. Pour the chicken mixture into the baking dish and spread it out evenly.
  6. Pour the biscuit mix into a mixing bowl and set aside the seasoning packet.
  7. Add the shredded cheddar and 2 cups of milk to the bowl with the biscuit mix.
  8. Stir until no lumps remain.
  9. Pour the biscuit batter over the chicken mixture in the baking dish.
  10. Place the dish in the oven and bake until the biscuit topping is nicely browned, about 50 – 55 minutes.
  11. Remove the casserole from the oven.
  12. Combine the melted butter and the packet of biscuit seasoning in a small bowl.
  13. Brush the seasoned butter mixture evenly over the biscuit topping.
  14. Allow the casserole to rest for about 10 minutes to let it thicken up.
  15. Sprinkle with fresh chopped parsley if desired.
  16. Serve and enjoy!
