Description

A refreshing and healthy sweet potato salad with a zesty dressing.


Ingredients

Scale
  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey (optional)
  • 2 tablespoons fresh parsley, chopped
  • 2 green onions, sliced
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Bring a pot of salted water to a boil. Add the diced sweet potatoes and cook for 15–20 minutes until tender but still firm. Drain and let cool slightly.
  2. In a large bowl, whisk olive oil, lemon juice, honey (if using), salt, and black pepper.
  3. Add the cooked sweet potatoes to the bowl and toss gently to coat.
  4. Stir in parsley and green onions.

  • This salad can be served warm or chilled.
