Description
A refreshing and healthy sweet potato salad with a zesty dressing.
Ingredients

- 2 medium sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey (optional)
- 2 tablespoons fresh parsley, chopped
- 2 green onions, sliced
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Bring a pot of salted water to a boil. Add the diced sweet potatoes and cook for 15–20 minutes until tender but still firm. Drain and let cool slightly.
- In a large bowl, whisk olive oil, lemon juice, honey (if using), salt, and black pepper.
- Add the cooked sweet potatoes to the bowl and toss gently to coat.
- Stir in parsley and green onions.
Notes
- This salad can be served warm or chilled.
- Feel free to add other vegetables or proteins for a more substantial dish.
