  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Chicken: Carefully butterfly the chicken breasts by slicing them horizontally, but not all the way through. Open them like a book and place between plastic wrap. Pound gently with a meat mallet to an even thickness.
  3. Make the Filling: In a bowl, combine chopped spinach, ricotta, feta, sun-dried tomatoes, and minced garlic. Mix well. Season with salt and pepper.
  4. Stuff the Chicken: Spread the filling evenly on one side of each chicken breast. Fold the other half over the filling and secure edges with toothpicks.
  5. Season the Chicken: Brush stuffed breasts with olive oil, and sprinkle with oregano, paprika, salt, and pepper.
  6. Cook: Heat an ovenproof skillet over medium heat and add a little olive oil. Sear the chicken on each side for about 3-4 minutes until golden brown. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
  7. Serve: Remove toothpicks, slice, and garnish with fresh thyme.
