  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar (for whipped cream)
  • Extra strawberries for garnish
  • Powdered sugar for dusting

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Make the Cake Batter: In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the creamed mixture alternately with the milk, starting and ending with the flour mixture.
  3. Bake: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  4. Make the Whipped Cream: In a chilled bowl, whip the heavy cream until soft peaks form. Add the powdered sugar and continue whipping until stiff peaks form.
  5. Assemble the Cake: Place one cake layer on a serving plate. Spread a layer of whipped cream on top, and layer with sliced strawberries. Place the second cake layer on top. Spread whipped cream over the top of the cake and garnish with additional strawberries. Dust with powdered sugar for a finished look.
