- 100g granulated sugar

- 1 tsp baking powder
- Pinch of salt
- 200ml heavy cream
- 50g powdered sugar
- 1 tsp vanilla extract
- Fresh strawberries (whole and sliced for filling)
- Powdered sugar for dusting
Instructions
- Preheat the Oven: Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
- Prepare the Batter: In a large bowl, beat the eggs with the granulated sugar using an electric mixer until the mixture is pale and fluffy. Sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture, being careful not to deflate it.
- Bake the Cake: Pour the batter into the prepared baking sheet and spread it evenly. Bake for about 10-12 minutes, or until the cake is lightly golden and springs back when touched.
- Roll the Cake: Once baked, immediately turn the cake onto a clean towel dusted with powdered sugar. Gently peel off the parchment paper and roll the cake with the towel from the short end. Let it cool completely in this rolled shape.
- Prepare the Cream Filling: Beat the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Assemble the Swiss Roll: Carefully unroll the cooled cake and spread an even layer of the cream filling over it. Add sliced strawberries on top of the cream. Re-roll the cake without the towel.
- Decorate: Use the remaining cream to pipe decorations on top of the roll and place whole strawberries on top.
- Serve: Dust with powdered sugar before serving.
