Description

A delightful and airy dessert featuring layers of strawberry goodness and cream.

Ingredients

Scale
  • 1 angel food cake (store-bought or homemade)
  • 2 cups heavy whipping cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup water
  • 2 tablespoons powdered sugar (optional for dusting)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the Strawberries:
    • Slice the strawberries and set aside. Reserve some whole and sliced strawberries for garnishing the top.
    • In a small saucepan, combine 1/4 cup of water with a small amount of the sliced strawberries and 1 tablespoon of the granulated sugar.
    • Simmer until the mixture thickens slightly, then let it cool.
  2. Whip the Cream:
    • In a large mixing bowl, combine the heavy whipping cream, remaining granulated sugar, and vanilla extract.
    • Whip the mixture with an electric mixer on medium-high speed until stiff peaks form.
  3. Assemble the Cake:
    • Carefully cut the angel food cake into two or three horizontal layers.
    • Spread a generous layer of whipped cream over the bottom layer of the cake.
    • Add a layer of sliced strawberries over the whipped cream.
    • Repeat the layers until the cake is reassembled.
    • Spread the remaining whipped cream over the top and sides of the cake.
  4. Decorate:
    • Arrange the reserved strawberries on top of the cake.
    • Dust with powdered sugar if desired.
    • Add fresh mint leaves for a touch of color and flavor.

Notes

  • Ensure the whipping cream is chilled for best results.
  • For a more intense strawberry flavor, let the strawberries sit with sugar for about 15 minutes before assembling.
  • If using a store-bought cake, look for one that is fresh and fluffy.
  • Add a layer of lemon curd for a tangy twist between the cake layers.
  • Serve immediately or refrigerate for up to 4 hours to maintain freshness.
