Instructions
- Prepare the Strawberries:
- Slice the strawberries and set aside. Reserve some whole and sliced strawberries for garnishing the top.
- In a small saucepan, combine 1/4 cup of water with a small amount of the sliced strawberries and 1 tablespoon of the granulated sugar.
- Simmer until the mixture thickens slightly, then let it cool.
- Whip the Cream:
- In a large mixing bowl, combine the heavy whipping cream, remaining granulated sugar, and vanilla extract.
- Whip the mixture with an electric mixer on medium-high speed until stiff peaks form.
- Assemble the Cake:
- Carefully cut the angel food cake into two or three horizontal layers.
- Spread a generous layer of whipped cream over the bottom layer of the cake.
- Add a layer of sliced strawberries over the whipped cream.
- Repeat the layers until the cake is reassembled.
- Spread the remaining whipped cream over the top and sides of the cake.
- Decorate:
- Arrange the reserved strawberries on top of the cake.
- Dust with powdered sugar if desired.
- Add fresh mint leaves for a touch of color and flavor.
