Description

A deliciously creamy and fruity dessert, perfect for gatherings and warm days.

Ingredients

Scale
  • 1 1/2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup strawberry puree
  • 1 packet gelatin (or 2 1/2 teaspoons)
  • 1 cup heavy whipping cream, chilled
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Crust:
    • Preheat the oven to 350°F (175°C).
    • In a medium-sized bowl, combine the crushed graham crackers and melted butter.
    • Press the mixture firmly into the bottom of an 8×8-inch baking dish.
    • Bake for 10 minutes. Remove and allow to cool.
  2. Make the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
    • Add strawberry puree and mix well.
    • Dissolve gelatin in 1/4 cup hot water and stir into the cheesecake mixture.
    • If desired, add a few drops of pink food coloring for a more vibrant shade.
    • In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold it into the strawberry mixture.
    • Stir in the vanilla extract.
  3. Assemble the Dessert:
    • Pour the cheesecake filling over the cooled crust and spread evenly.
    • Chill in the refrigerator for at least 4 hours or until set.
  4. Garnish and Serve:
    • Before serving, top with whipped cream and sprinkles.
    • Garnish with fresh strawberries if desired.

Notes

  • For a finer crust texture, you can process the graham crackers in a food processor.
  • Ensure the cream cheese is fully softened to avoid lumps in the filling.
  • The dessert can be made a day in advance and stored in the refrigerator, making it perfect for gatherings.
  • Use a sharp knife to cut clean squares, wiping the blade with a damp cloth between cuts.
