- 1 teaspoon vanilla extract
Instructions
- Prepare the Crust:
- Preheat the oven to 350°F (175°C).
- In a medium-sized bowl, combine the crushed graham crackers and melted butter.
- Press the mixture firmly into the bottom of an 8×8-inch baking dish.
- Bake for 10 minutes. Remove and allow to cool.
- Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
- Add strawberry puree and mix well.
- Dissolve gelatin in 1/4 cup hot water and stir into the cheesecake mixture.
- If desired, add a few drops of pink food coloring for a more vibrant shade.
- In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold it into the strawberry mixture.
- Stir in the vanilla extract.
- Assemble the Dessert:
- Pour the cheesecake filling over the cooled crust and spread evenly.
- Chill in the refrigerator for at least 4 hours or until set.
- Garnish and Serve:
- Before serving, top with whipped cream and sprinkles.
- Garnish with fresh strawberries if desired.
