  • 4 cups high-quality chicken broth
  • 23 tablespoons gochujang (Korean chili paste)
  • 1 teaspoon chili oil with crisps
  • 23 fresh chilies (bird’s eye or serranos)
  • 1 inch fresh ginger
  • 2 cloves garlic
  • 2 tablespoons soy sauce
  • 1 tablespoon non-alcoholic mirin alternative
  • 1 tablespoon sesame oil
  • 2 servings ramen noodles (fresh or dried)
  • 2 soft-boiled eggs
  • 2 green onions/scallions
  • 1 nori (seaweed sheets) (optional)
  • 1/2 cup corn kernels (optional)
  • 1/2 cup bamboo shoots (menma) (optional)
  • 1 tablespoon toasted sesame seeds (optional)
  • 1 tablespoon neutral oil (like canola or vegetable)

Instructions

  1. If marinating your chicken, combine a tablespoon of soy sauce, a teaspoon of grated ginger, a half teaspoon of gochujang, and a drizzle of sesame oil with your boneless, skinless chicken thighs. Let them sit for at least 15-20 minutes, or up to an hour in the fridge.
  2. Heat a tablespoon of neutral oil in a large pan over medium-high heat. Sear the chicken thighs for 5-7 minutes per side, or until beautifully browned and cooked through.
  3. Remove the chicken from the pan and let it rest on a cutting board. Once slightly cooled, slice it thinly or shred it into bite-sized pieces. Set aside.
  4. In the same pan, add another drizzle of oil if needed. Sauté 2 cloves of minced garlic and a 1-inch piece of grated fresh ginger for about a minute until fragrant. Be careful not to burn them.
  5. Pour in 4 cups of high-quality chicken broth. Stir in 2-3 tablespoons of gochujang, 2 tablespoons of soy sauce, and 1 tablespoon of non-alcoholic mirin alternative.
  6. Bring the broth to a gentle simmer, then reduce the heat to low and let it simmer for at least 10-15 minutes. Taste and adjust seasonings.
  7. While the broth is simmering, bring a separate pot of water to a rolling boil.
  8. Add your ramen noodles and cook according to package directions. Drain the noodles thoroughly and divide them evenly among your serving bowls.
  9. Prepare your toppings: soft-boiled eggs, green onions, fresh chilies, and any other desired toppings.
  10. Once the noodles are in the bowls, carefully ladle the hot broth over them.
  11. Arrange your cooked chicken slices or shreds artfully on top of the noodles and broth.
  12. Add your prepared toppings and drizzle a teaspoon of chili oil with crisps over each bowl just before serving.
