Description
This delightful and easy bacon corn side dish is perfect for any meal.
Ingredients
Scale
- 2 cups corn kernels (fresh or frozen)
- 6 slices bacon
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- Salt – to taste
- Black pepper – to taste
- Fresh parsley – for garnish
- 1 tablespoon olive oil (optional)
Instructions
- Cook the Bacon: In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and place it on a paper towel to drain excess grease. Once cooled, crumble into small pieces.
- Sauté Vegetables: In the same skillet, add butter and melt over medium heat. Add chopped onion and minced garlic, sautéing until the onion becomes translucent and fragrant.
- Cook the Corn: Stir in the corn kernels to the skillet. If using frozen corn, ensure it is fully thawed and drained before adding. Cook for about 5-7 minutes, stirring occasionally, until the corn is tender and slightly golden.
- Combine Ingredients: Add the crumbled bacon back into the skillet with the corn mixture. Season with salt and black pepper to taste. Stir everything together, allowing the flavors to meld for an additional 2-3 minutes.
- Garnish and Serve: Transfer the corn to a serving dish. Garnish with freshly chopped parsley for a burst of color and freshness.
Notes
- Flavor Variations: Add a pinch of smoked paprika or cayenne pepper for a smoky or spicy kick. For a creamy texture, stir in a tablespoon of cream or crème fraîche before serving.
- Texture Tips: To achieve a bit more crunch, fry the corn a bit longer until it starts to char.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet for best results.
