Description
A delicious rich mixed fruit cake perfect for any occasion!
Ingredients
- 1 cup unsalted butter, softened
- 1 cup packed brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup milk
- 1 tablespoon vanilla extract
- 2 cups mixed dried fruits (raisins, currants, cherries, apricots)
- 1 cup mixed nuts (pecans, walnuts, almonds)
- 1/4 cup candied peel
- 1/4 cup brandy or orange juice
Instructions
-
Prepare the Fruit Mixture: In a large bowl, combine the mixed dried fruits, nuts, and candied peel. Add brandy or orange juice, stir well, and let soak for at least an hour or overnight for best results.
-
Preheat Oven and Prepare Pan: Preheat your oven to 300°F (150°C). Grease and line a loaf pan with parchment paper.
-
Make the Batter: In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy. Beat in eggs one at a time, mixing well after each addition. Sift together the flour, baking powder, cinnamon, and nutmeg. Gradually fold into the creamed mixture. Stir in milk and vanilla extract until well combined.
-
Combine and Fill: Fold the soaked fruit and nut mixture into the batter, ensuring even distribution. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
-
Bake: Bake in the preheated oven for approximately 2 to 2.5 hours, or until a skewer inserted into the center comes out clean. If the top begins to brown too quickly, cover with aluminum foil.
-
Cool: Remove from oven and allow to cool in the pan for about 10 minutes. Turn out onto a wire rack to cool completely.
Notes
-
Storage: Wrap the cake tightly in plastic wrap and store in an airtight container. It can last for weeks when stored properly.
-
Flavor Enhancement: For a richer taste, periodically brush the cake with brandy or your chosen spirit over several weeks.
-
Customization: Feel free to modify the fruit and nut combination based on personal preference or availability.
-
Troubleshooting: If your cake is dry, ensure accurate measurements and proper soaking of fruits. Adjust baking time if needed based on your oven’s performance.
