- 1 kg fresh beetroots
- 800 g granulated sugar
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1/2 teaspoon salt
Instructions
- Prepare the Beetroots:
- Wash the beetroots thoroughly to remove any dirt.
- Peel and grate the beetroots either with a box grater or a food processor.
- Cooking the Jam:
- In a large pot, combine the grated beetroots and granulated sugar. Let it sit for about 20 minutes. This allows the sugar to draw out the juice from the beetroots.
- Add lemon juice, lemon zest, vanilla extract, and salt to the beetroot mixture.
- Simmer and Stir:
- Place the pot over medium heat and bring to a gentle simmer.
- Stir continuously to prevent the jam from sticking to the bottom.
- Reduce the heat to low and let it cook for about 45-60 minutes, or until the mixture thickens to your desired consistency.
- Testing for Doneness:
- To check if the jam is ready, place a small spoonful on a chilled plate. If it wrinkles when pushed with a finger, it’s set.
- If not, continue cooking, checking every 10 minutes.
- Sterilize Jars:
- While the jam is cooking, sterilize glass jars and lids by boiling them in water for 10 minutes.
- Fill and Seal Jars:
- Once the jam is done, carefully ladle it into the sterilized jars.
- Seal the jars with the lids immediately.
- Cooling:
- Allow the jars to cool at room temperature. The sealing will create a vacuum as the jam cools.

- Consistency: For a smoother jam, you can blend the cooked jam with an immersion blender before jarring.
