Description

Ingredients

  • 800 g granulated sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Beetroots:
    • Wash the beetroots thoroughly to remove any dirt.
    • Peel and grate the beetroots either with a box grater or a food processor.
  2. Cooking the Jam:
    • In a large pot, combine the grated beetroots and granulated sugar. Let it sit for about 20 minutes. This allows the sugar to draw out the juice from the beetroots.
    • Add lemon juice, lemon zest, vanilla extract, and salt to the beetroot mixture.
  3. Simmer and Stir:
    • Place the pot over medium heat and bring to a gentle simmer.
    • Stir continuously to prevent the jam from sticking to the bottom.
    • Reduce the heat to low and let it cook for about 45-60 minutes, or until the mixture thickens to your desired consistency.
  4. Testing for Doneness:
    • To check if the jam is ready, place a small spoonful on a chilled plate. If it wrinkles when pushed with a finger, it’s set.
    • If not, continue cooking, checking every 10 minutes.
  5. Sterilize Jars:
    • While the jam is cooking, sterilize glass jars and lids by boiling them in water for 10 minutes.
  6. Fill and Seal Jars:
    • Once the jam is done, carefully ladle it into the sterilized jars.
    • Seal the jars with the lids immediately.
  7. Cooling:
    • Allow the jars to cool at room temperature. The sealing will create a vacuum as the jam cools.
