Ingredients
Scale
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup strong espresso or coffee, cooled
- 1/4 cup coffee liqueur (optional)
- 16–20 ladyfinger biscuits
- 2 tablespoons cocoa powder
- Dark chocolate shavings (optional, for garnish)
- Fresh mint leaves (optional, for garnish)
Instructions
- Prepare the Mascarpone Mixture:
- In a mixing bowl, combine the mascarpone cheese, heavy cream, sugar, and vanilla extract.
- Use an electric mixer to beat the mixture until smooth and creamy. Do not overbeat as it may curdle.
- Prepare the Coffee Mixture:
- In a shallow dish, mix the cooled espresso or coffee with the coffee liqueur (if using).
- Assemble the Dessert Cups:
- Quickly dip each ladyfinger into the coffee mixture, ensuring it’s not soaked.
- Place a layer of soaked ladyfingers at the bottom of each dessert cup or ramekin.
- Spread a layer of the mascarpone mixture over the ladyfingers.
- Repeat with another layer of soaked ladyfingers and top with more mascarpone mixture.
- Chill:
- Dust the top layer generously with cocoa powder.
- Cover and refrigerate the dessert cups for at least 4 hours, preferably overnight, to set.
- Garnish and Serve:
- Before serving, add dark chocolate shavings or fresh mint leaves for an extra touch.
Notes
- Ensure the coffee is cooled before dipping the ladyfingers to prevent sogginess.
- Adjust the sugar and coffee liqueur to taste, based on your preference for sweetness and flavor intensity.
- For a more intense coffee flavor, let the ladyfingers absorb slightly longer, but avoid oversoaking.
- Utilize clear cups to showcase the beautiful layers for an appealing presentation.
