- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, drained and chopped
- 4 cups fresh spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the cheese tortellini in boiling salted water according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, heat olive oil and sauté minced garlic for about 1 minute.
- Add chopped sun-dried tomatoes; cook for 2 minutes before adding fresh spinach until wilted.
- Pour in heavy cream and stir in Parmesan cheese, salt, pepper, and optional red pepper flakes; simmer for about 5 minutes until slightly thickened.
- Toss cooked tortellini into the skillet until well-coated in sauce.
- Serve immediately, garnished with fresh basil.
