Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, drained and chopped
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the cheese tortellini in boiling salted water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, heat olive oil and sauté minced garlic for about 1 minute.
  3. Add chopped sun-dried tomatoes; cook for 2 minutes before adding fresh spinach until wilted.
  4. Pour in heavy cream and stir in Parmesan cheese, salt, pepper, and optional red pepper flakes; simmer for about 5 minutes until slightly thickened.
  5. Toss cooked tortellini into the skillet until well-coated in sauce.
  6. Serve immediately, garnished with fresh basil.
