A refreshing lemon syrup perfect for drinks and desserts.
Ingredients
Scale
- ¾ cup sugar (150g)
- ½ cup fresh lemon juice (approx 2 lemons (120ml))
- ½ cup water (120ml)
- 1 lemon peel (unwaxed organic lemons)
Instructions
- Add the sugar, lemon juice, and water to a pot, along with 1 of the lemon peels, chopped.
- Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Remove from the heat and cool slightly.
- Place a sieve over a bowl and carefully pour in the syrup to strain. Discard the peels.
- Allow the mixture to cool and pour into a sanitized bottle or jar.
- Refrigerate for up to 2 weeks.
