Description

A quick and delicious taco skillet recipe that’s perfect for busy weeknights.


Ingredients

  • 1 lb ground beef (or turkey)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 medium bell peppers, chopped
  • 2 cups spinach, roughly chopped
  • 1 cup canned diced tomatoes, with juice
  • 2 tbsp taco seasoning
  • 1 cup shredded cheese, for topping

Instructions

  1. Add olive oil to a large skillet over medium heat. Once hot, add the ground beef and cook until browned, breaking it into smaller pieces, about 5-7 minutes.
  2. Add the diced onion and chopped bell peppers to the skillet. Cook until the vegetables are tender, about 5 minutes.
  3. Stir in the canned diced tomatoes and taco seasoning, mixing well. Allow the mixture to simmer for another 5 minutes to blend the flavors.
  4. Fold in the chopped spinach and cook until wilted, about 2 minutes.
  5. Sprinkle shredded cheese evenly over the mixture and remove from heat. Allow it to rest for a few minutes until the cheese is melted and bubbly.
