Instructions

  1. Prepare the Meringue: Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper. In a large bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until stiff peaks form. Gently fold in the vanilla extract, white vinegar, and cornstarch. Spread the meringue mixture onto the prepared baking sheet, shaping it into a square or rectangle. Bake for about 1-1.5 hours until it is crisp and dry. Let it cool completely.
  2. Prepare the Raspberry Layer: In a small saucepan, combine raspberry jam and lemon juice. Heat over medium heat until smooth. Remove from heat and gently fold in fresh raspberries.
  3. Prepare the Cream Layer: In a chilled mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  4. Assemble the Dessert: Place the sponge cake base on a serving platter. Spread the raspberry mixture evenly over the sponge cake. Spread the whipped cream layer over the raspberries. Gently place the cooled meringue on top.
  5. Garnish: Add fresh raspberries on top for decoration.
