Description
A delightful layered dessert with meringue, fresh raspberries, and whipped cream that is perfect for any occasion.
Ingredients
Scale
- 4 large egg whites
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 2 cups fresh raspberries
- 1/2 cup raspberry jam
- 1 tablespoon lemon juice
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 pre-made sponge cake base (optional if you prefer homemade)
- Fresh raspberries for garnish
Instructions
- Prepare the Meringue: Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper. In a large bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until stiff peaks form. Gently fold in the vanilla extract, white vinegar, and cornstarch. Spread the meringue mixture onto the prepared baking sheet, shaping it into a square or rectangle. Bake for about 1-1.5 hours until it is crisp and dry. Let it cool completely.
- Prepare the Raspberry Layer: In a small saucepan, combine raspberry jam and lemon juice. Heat over medium heat until smooth. Remove from heat and gently fold in fresh raspberries.
- Prepare the Cream Layer: In a chilled mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Assemble the Dessert: Place the sponge cake base on a serving platter. Spread the raspberry mixture evenly over the sponge cake. Spread the whipped cream layer over the raspberries. Gently place the cooled meringue on top.
- Garnish: Add fresh raspberries on top for decoration.
Notes
- Ensure the mixing bowl and beaters are completely clean and dry when whipping egg whites.
- Slowly incorporate sugar to achieve a glossy, stable meringue.
- Adjust sweetness of the raspberry layer by adding more jam or sugar to taste.
- Refrigerate the dessert for at least 2 hours before serving to allow the flavors to meld.
- Serve chilled for best results.
