- 2 medium fresh zucchini (about 1 cup grated)
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1 small onion (diced)
- 2 tablespoons olive oil
- 2 tablespoons fresh basil or parsley (chopped)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In an oven-safe skillet, heat olive oil over medium heat. Sauté the diced onion and grated zucchini for about 5 minutes until softened.
- In a bowl, whisk the eggs until fluffy. Stir in the sautéed veggies, shredded cheese, chopped herbs, salt, and pepper.
- Pour the mixture back into the skillet and cook undisturbed for about 5 minutes until edges start to set.
- Transfer the skillet to the oven and bake for 15-20 minutes until puffed and golden brown.
- Allow to cool slightly before slicing and serving warm.
