- 6 large eggs
- 1 cup fresh broccoli florets
- 1 cup shredded sharp cheddar cheese
- 1 small onion, diced
- 1/2 cup whole milk
- 1/2 tsp salt (to taste)
- 1/4 tsp black pepper (to taste)
- 2 tbsp extra virgin olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in an oven-safe skillet over medium heat. Sauté the diced onion until translucent.
- Add broccoli florets and cook for 3-4 minutes until bright green.
- In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
- Pour the egg mixture over the sautéed vegetables in the skillet and let it cook on low heat for about 5 minutes without stirring.
- Sprinkle cheddar cheese on top, then transfer the skillet to the preheated oven.
- Bake for 15-20 minutes until puffed up and golden brown.
- Allow to cool slightly before slicing into wedges.
