- 2 large chicken breasts
- 1 tablespoon ranch seasoning
- 1 cup shredded mozzarella cheese
- 1/2 cup cream cheese
- 4 low-carb tortillas
- 1 tablespoon olive oil
- 1/4 cup chopped green onions
- 1/2 cup cooked beef bits (optional)
Instructions
- Cook chicken breasts until fully cooked; shred into pieces.
- Mix shredded chicken, cream cheese, ranch seasoning, mozzarella, and green onions in a bowl.
- Heat skillet over medium heat; add olive oil.
- Spread filling on half of a tortilla and fold.
- Cook quesadilla for 3-4 minutes on each side until golden and crispy.
- Slice and serve warm with salsa or guacamole.
