Instructions

- Season the Chicken: Add the chicken drumsticks to the marinade, ensuring they are well coated. Season with salt, pepper, and paprika. Cover and refrigerate for at least 1 hour, or overnight for maximum flavor.
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Arrange the Chicken: Place the marinated drumsticks on a baking sheet lined with parchment paper. Arrange lemon slices over and around the drumsticks. Scatter the mixed vegetables around the chicken.
- Roast the Chicken: Roast in the preheated oven for about 35-40 minutes or until the drumsticks are cooked through and golden brown. The internal temperature should reach 165°F (75°C).
- Rest and Serve: Allow the chicken to rest for a few minutes before serving. Garnish with additional fresh herbs if desired.
