Description

A delicious and quick stir-fry recipe featuring ground chicken, mixed vegetables, and rice, perfect for a weeknight dinner.


Ingredients

Scale
  • 2 cups cooked rice
  • 1 pound ground chicken
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • to taste Salt and pepper
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat sesame oil in a large skillet over medium heat. Add the ground chicken and cook until browned.
  2. Add the mixed vegetables to the other side of the skillet and cook until heated through.
  3. Crack the eggs in the empty part of the skillet and scramble them.
  4. Combine the scrambled eggs with the chicken and vegetables.
  5. Add the cooked rice and soy sauce, stirring well to combine. Cook for another 3-5 minutes, seasoning with salt and pepper to taste.
  6. Garnish with chopped green onions before serving.

Notes

  • Leftover rice works best in this recipe.
  • Feel free to add other vegetables as per preference.
  • This dish can be topped with sesame seeds for extra flavor.
