- 2 cups cooked rice
- 1 pound ground chicken
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil

- 2 green onions, chopped (for garnish)
Instructions
- Heat sesame oil in a large skillet over medium heat. Add the ground chicken and cook until browned.
- Add the mixed vegetables to the other side of the skillet and cook until heated through.
- Crack the eggs in the empty part of the skillet and scramble them.
- Combine the scrambled eggs with the chicken and vegetables.
- Add the cooked rice and soy sauce, stirring well to combine. Cook for another 3-5 minutes, seasoning with salt and pepper to taste.
- Garnish with chopped green onions before serving.
Notes
- Leftover rice works best in this recipe.
- Feel free to add other vegetables as per preference.
- This dish can be topped with sesame seeds for extra flavor.
