Description

A deliciously festive cheesecake with a gingerbread cookie crust and cream cheese filling, perfect for the holiday season.

Ingredients

Scale
  • 2 cups gingerbread cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs
  • 1 cup sour cream
  • Gingerbread cookies (for decoration)
  • Whipped cream (for topping)
  • Edible gold sprinkles (optional, for garnish)

Instructions

  1. Prepare the Crust: Preheat your oven to 325°F (163°C). In a bowl, combine gingerbread cookie crumbs and melted butter. Press the mixture firmly into the bottom of a greased ring-shaped cake pan. Bake for 10 minutes, then set aside to cool.
  2. Make the Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add sugar, vanilla extract, ground ginger, cinnamon, and nutmeg. Mix well. Beat in eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in the sour cream until the mixture is smooth and creamy.
  3. Assemble the Cheesecake: Pour the cream cheese mixture over the cooled crust in the cake pan. Smooth the top with a spatula.
  4. Bake: Place the cake pan in the oven and bake for 50-60 minutes or until the center is set. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about an hour.
  5. Chill: Refrigerate the cheesecake for at least 4 hours, or overnight for best results.
  6. Decorate: Once chilled, remove the cheesecake from the pan and place on a serving platter. Pipe whipped cream on top in decorative swirls. Arrange gingerbread cookies around the top. Sprinkle with edible gold sprinkles for a festive touch.

Notes

  • Ensure all your ingredients are at room temperature for a smoother batter.
  • To prevent cracks, avoid overmixing the batter and bake the cheesecake in a water bath.
  • For easier removal, line the bottom of the pan with parchment paper before pressing in the crust.
  • Customize decoration with chocolate drizzles or candied ginger for added flair.
