Instructions
- Prepare the Crust: Preheat your oven to 325°F (163°C). In a bowl, combine gingerbread cookie crumbs and melted butter. Press the mixture firmly into the bottom of a greased ring-shaped cake pan. Bake for 10 minutes, then set aside to cool.
- Make the Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add sugar, vanilla extract, ground ginger, cinnamon, and nutmeg. Mix well. Beat in eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in the sour cream until the mixture is smooth and creamy.
- Assemble the Cheesecake: Pour the cream cheese mixture over the cooled crust in the cake pan. Smooth the top with a spatula.
- Bake: Place the cake pan in the oven and bake for 50-60 minutes or until the center is set. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about an hour.
