Instructions
- Slice the red onion thinly using a sharp knife or mandoline for uniformity.
- In a saucepan over medium heat, combine apple cider vinegar, water, sugar, and salt. Stir until dissolved and let it gently simmer.
- Place sliced onions in a clean glass jar and pour the hot brine over them until fully submerged.
- Allow the jar to cool at room temperature before sealing tightly and refrigerating for at least one hour (overnight for best flavor).
- Enjoy these pickled onions on tacos, salads, or straight from the jar!
