Description

A delicious and easy recipe for loaded nachos topped with ground beef, cheese, and fresh vegetables.


Ingredients

  • ½ lb ground beef
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon oregano
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 4 cups tortilla chips (triangle or rectangle work best)
  • 2 cups shredded cheddar cheese (or a Mexican cheese blend)
  • 1 roma tomato, diced
  • ½ bell pepper, diced
  • 1 scallion, sliced
  • Chopped fresh cilantro, for garnish
  • Sour cream, for serving

Instructions

  1. In a large skillet over medium heat, brown the ground beef with the chili powder, cumin, oregano, salt, and pepper. Drain any excess fat and set the cooked meat aside.
  2. Preheat your air fryer to 320°F (160°C).
  3. Line the air fryer basket with parchment paper or aluminum foil for easy cleanup.
  4. Place half of the tortilla chips in the bottom of the prepared basket. Layer half of the shredded cheese, half of the diced tomato, half of the diced bell pepper, and half of the cooked ground beef over the chips.
  5. Repeat the layers with the remaining chips, cheese, tomato, bell pepper, and ground beef.
  6. Air fry for 5 minutes, or until the cheese is fully melted and bubbly.
  7. Carefully remove the basket and top the nachos with fresh sliced scallions and chopped cilantro.
  8. Serve immediately with a side of sour cream or your other favorite toppings like salsa, guacamole, or jalapeños.
