- 2 tbsp salsa (Pace chunky salsa recommended for texture)
- 2 tsp taco seasoning
- 5 oz cottage cheese (Good Culture for thicker consistency)
- 5 cherry tomatoes (halved)
- 0 tsp pickled jalapeños (finely minced)
- 3 tbsp cheese (shredded, preferred)
- 0 tsp onion powder
- 1 tsp cilantro (fresh, chopped)
- 1 pinch tajin (for seasoning)
- 1 bag tortilla chips (thicker style recommended for scooping)
Instructions
- Dice the chicken into 1/2-inch cubes and place in a microwave-safe bowl with salsa and taco seasoning.
- Microwave for 1-2 minutes, stirring halfway through, until cooked through.
- In a separate bowl, blend cottage cheese, halved cherry tomatoes, pickled jalapeños, and onion powder until smooth.
- Transfer to a microwave-safe bowl, stir in shredded cheese, and microwave for 1 minute, stirring halfway through.
- Spoon the warm cheese dip into a serving bowl and top with the seasoned chicken mixture.
- Garnish with fresh cilantro and a pinch of tajin; serve with tortilla chips.
