Description

Indulge in this rich and creamy S’mores Cheesecake, a delightful combination of classic s’mores flavors with a smooth cheesecake texture.

Ingredients

Scale
  • 1 ½ cups crushed graham crackers
  • ½ cup melted butter
  • ¼ cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate, melted
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup mini marshmallows
  • 1 cup whipped cream
  • ½ cup chocolate syrup
  • ¼ cup cocoa powder (optional, for extra chocolate flavor in the crust)
  • Pinch of salt

Instructions

  1. Prepare the Crust: Preheat your oven to 350°F (175°C). In a bowl, mix crushed graham crackers, melted butter, and sugar (add cocoa powder if desired). Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool.

  2. Make the Cheesecake Filling: In a large bowl, beat cream cheese until smooth. Add sugar, and mix until fully combined. Blend in heavy cream, melted chocolate, eggs, and vanilla extract until creamy. Pour the mixture over the cooled crust.

  3. Bake the Cheesecake: Bake at the same temperature for 50-60 minutes or until the center is set. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight.

  4. Add the Topping: Once the cheesecake is chilled, spread a layer of whipped cream over the top. Sprinkle mini marshmallows evenly over the whipped cream. Use a kitchen torch to toast the marshmallows lightly. Drizzle chocolate syrup over the top.

Notes

  • Room Temperature Ingredients: Ensure cream cheese and eggs are at room temperature for a smoother filling.
  • Water Bath: Consider baking the cheesecake in a water bath to prevent cracks.
  • Torch Safety: Be careful when using a kitchen torch. Keep a safe distance and gently toast the marshmallows.
  • Chill Thoroughly: The cheesecake must be thoroughly chilled to set properly, enhancing taste and texture.
