- 3 cups shredded green cabbage
- 2 cups shredded purple cabbage
- 1 cup shredded carrots
- 1 red bell pepper (thinly sliced)
- 1 yellow bell pepper (thinly sliced)
- 2 cups cooked chicken (shredded or diced)
- 3 green onions (sliced)
- 0 cups cilantro (chopped)
- 0 cups roasted peanuts (chopped)
- 1 cucumber (sliced)
- 0 cups peanut butter
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp lime juice
- 2 tbsp honey
- 2 tsp sesame oil
- 1 tsp ginger (grated)
- 1 clove garlic (minced)
Instructions
- Prep all vegetables and place them into a large salad bowl.
- Add cooked chicken to the bowl.
- In a separate bowl, whisk peanut butter, soy sauce, rice vinegar, lime juice, honey, sesame oil, ginger, and garlic. Add water until smooth.
- Pour dressing over the salad and toss to coat.
- Top with chopped peanuts, cilantro, and sesame seeds before serving.

- This salad is best served fresh.
