Description

A vibrant and healthy salad loaded with colorful veggies and shredded chicken, topped with a creamy peanut dressing.


Ingredients

  • 3 cups shredded green cabbage
  • 2 cups shredded purple cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper (thinly sliced)
  • 1 yellow bell pepper (thinly sliced)
  • 2 cups cooked chicken (shredded or diced)
  • 3 green onions (sliced)
  • 0 cups cilantro (chopped)
  • 0 cups roasted peanuts (chopped)
  • 1 cucumber (sliced)
  • 0 cups peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp lime juice
  • 2 tbsp honey
  • 2 tsp sesame oil
  • 1 tsp ginger (grated)
  • 1 clove garlic (minced)

Instructions

  1. Prep all vegetables and place them into a large salad bowl.
  2. Add cooked chicken to the bowl.
  3. In a separate bowl, whisk peanut butter, soy sauce, rice vinegar, lime juice, honey, sesame oil, ginger, and garlic. Add water until smooth.
  4. Pour dressing over the salad and toss to coat.
  5. Top with chopped peanuts, cilantro, and sesame seeds before serving.
