  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon chopped fresh parsley (optional, for garnish)
  • Cooking spray or olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare Breading Station: Set up three shallow dishes. In the first dish, add flour mixed with a pinch of salt and pepper. In the second dish, beat the eggs. In the third dish, mix breadcrumbs, Parmesan cheese, garlic powder, and onion powder.
  3. Bread the Zucchini Slices: Dip each zucchini slice into the flour, shaking off excess. Then, dip it into the beaten eggs, making sure to coat completely. Finally, press it into the breadcrumb mixture, ensuring it’s well coated. Place the breaded zucchini slices on the prepared baking sheet.
  4. Bake the Zucchini: Lightly spray the tops of the zucchini slices with cooking spray or drizzle with a bit of olive oil. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  5. Serve: Remove from the oven and transfer to a serving platter. Garnish with fresh parsley if desired.

Notes

  • For extra crispiness, use panko breadcrumbs and gently press them onto the zucchini to create a thicker coating.
  • Keep the zucchini slices uniform in thickness to ensure even cooking.
  • If you have an air fryer, you can also cook these at 400°F (200°C) for about 10-12 minutes, shaking halfway through.
  • Serve with a dipping sauce such as marinara, ranch, or garlic aioli for added flavor.
