Description

A delicious creamy spinach cheese tortellini that is quick and easy to prepare.


Ingredients

  • 1 (20–24 oz) package refrigerated cheese tortellini
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth (or vegetable broth)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 3 cups fresh spinach, roughly chopped
  • Salt and black pepper, to taste
  • Optional additions: cherry tomatoes, cooked chicken, mushrooms, or sun-dried tomatoes

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the tortellini and cook according to package directions (usually 3–5 minutes).
  3. Drain and set aside.
  4. In a large skillet, melt the butter over medium heat.
  5. Add the minced garlic and sauté for 1 minute until fragrant.
  6. Pour in the heavy cream and chicken broth.
  7. Stir in Parmesan cheese, Italian seasoning, and crushed red pepper flakes.
  8. Simmer for 3–4 minutes until slightly thickened.
  9. Add the chopped spinach to the skillet.
  10. Stir until the spinach wilts into the sauce (about 1–2 minutes).
  11. Add the cooked tortellini to the skillet.
  12. Gently toss to coat the pasta evenly in the creamy spinach sauce.
  13. Taste and season with salt and black pepper as needed.
  14. Serve hot, optionally topped with extra Parmesan cheese.
  15. Add any optional mix-ins as desired.
