Description
A delicious creamy spinach cheese tortellini that is quick and easy to prepare.

- 1 (20–24 oz) package refrigerated cheese tortellini
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth (or vegetable broth)
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ¼ teaspoon crushed red pepper flakes (optional)
- 3 cups fresh spinach, roughly chopped
- Salt and black pepper, to taste
- Optional additions: cherry tomatoes, cooked chicken, mushrooms, or sun-dried tomatoes
Instructions
- Bring a large pot of salted water to a boil.
- Add the tortellini and cook according to package directions (usually 3–5 minutes).
- Drain and set aside.
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream and chicken broth.
- Stir in Parmesan cheese, Italian seasoning, and crushed red pepper flakes.
- Simmer for 3–4 minutes until slightly thickened.
- Add the chopped spinach to the skillet.
- Stir until the spinach wilts into the sauce (about 1–2 minutes).
- Add the cooked tortellini to the skillet.
- Gently toss to coat the pasta evenly in the creamy spinach sauce.
- Taste and season with salt and black pepper as needed.
- Serve hot, optionally topped with extra Parmesan cheese.
- Add any optional mix-ins as desired.
