Description

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream, whipped
  • 1 can cherry pie filling (or fresh cherries if available)
  • Fresh mint leaves for garnish (optional)
  • 1 tbsp lemon juice (optional, for fresh cherries)

Instructions

  1. Prepare the Crust:

    • Preheat your oven to 350°F (175°C).
    • In a mixing bowl, combine the graham cracker crumbs and 1/4 cup of sugar.
    • Add the melted butter and mix until the crumbs are well coated.
    • Press the mixture into the bottom of a tart pan to form an even layer.
    • Bake for 10 minutes and then allow it to cool completely.
  2. Prepare the Filling:

    • In a large bowl, beat the softened cream cheese until smooth.
    • Add 1/3 cup of sugar and vanilla extract, and continue mixing until fully blended.
    • Gently fold in the whipped heavy cream until the mixture is light and creamy.
  3. Assemble the Tart:

    • Spread the cream cheese mixture evenly over the cooled crust.
    • Spoon the cherry pie filling over the top of the cream cheese layer. If using fresh cherries, mix them with lemon juice and spoon over the cheesecake layer.
  4. Chilling:

    • Refrigerate the tart for at least 4 hours, or until set.
  5. Serve:

    • Once chilled, remove from the fridge and garnish with fresh mint leaves if desired.
    • Cut into slices and enjoy!

Notes

  • For a more intense cherry flavor, you can add a layer of cherry jam beneath the cherries.
