Description
A rich and creamy cherry cheesecake tart with a buttery graham cracker crust.
Ingredients

- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 cup melted butter
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy cream, whipped
- 1 can cherry pie filling (or fresh cherries if available)
- Fresh mint leaves for garnish (optional)
- 1 tbsp lemon juice (optional, for fresh cherries)
Instructions

Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs and 1/4 cup of sugar.
- Add the melted butter and mix until the crumbs are well coated.
- Press the mixture into the bottom of a tart pan to form an even layer.
- Bake for 10 minutes and then allow it to cool completely.

Prepare the Filling:
- In a large bowl, beat the softened cream cheese until smooth.
- Add 1/3 cup of sugar and vanilla extract, and continue mixing until fully blended.
- Gently fold in the whipped heavy cream until the mixture is light and creamy.

Assemble the Tart:
- Spread the cream cheese mixture evenly over the cooled crust.
- Spoon the cherry pie filling over the top of the cream cheese layer. If using fresh cherries, mix them with lemon juice and spoon over the cheesecake layer.

Chilling:
- Refrigerate the tart for at least 4 hours, or until set.

Serve:
- Once chilled, remove from the fridge and garnish with fresh mint leaves if desired.
- Cut into slices and enjoy!
Notes
- For a more intense cherry flavor, you can add a layer of cherry jam beneath the cherries.
- The tart can also be topped with chopped nuts for added texture.
- Ensure the cream cheese is completely softened before mixing to achieve a smooth filling.
- The crust can be made a day in advance to save time on the day of serving.
