Instructions
- In a mixing bowl, combine 2 cups of ricotta cheese, 1 cup of powdered sugar, 1 teaspoon of vanilla extract, ½ teaspoon of cinnamon, and ½ cup of mini chocolate chips. Whisk the mixture thoroughly until it becomes smooth and creamy.
- Set your oven to 375°F (190°C) to ensure it’s at the perfect temperature for baking.
- Unroll one pre-made pie crust and carefully fit it into a 9×9-inch baking dish, pressing it securely along the bottom and edges.
- Spoon the prepared ricotta mixture evenly over the pie crust, spreading it out to cover the entire surface.
- Place the second pie crust over the filling, gently sealing the edges by pressing them together to prevent leakage during baking.
- Brush the entire surface of the top crust with the beaten egg to achieve a glossy finish. Sprinkle sugar evenly over the top for added sweetness and crunch.
- Put the baking dish in the oven and bake for 30-35 minutes, or until the crust is golden brown and cooked through.
- Remove the baked squares from the oven and allow them to cool for at least 30 minutes. This helps the filling set and makes cutting easier.
- Cut into squares once cooled. Optionally, garnish each square with chopped pistachios, maraschino cherries, or extra chocolate chips for added flavor and presentation.
