Ingredients

  • 1 cups all-purpose flour
  • 0 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 0 tsp baking powder
  • 0 tsp salt
  • 2 eggs (large)
  • 0 cup milk (whole)
  • 0 cup vegetable oil
  • 1 tsp vanilla extract
  • 0 cup espresso (strong, hot)
  • 0 cup hot water
  • 0 cup espresso (cooled)
  • 2 tbsp sugar
  • 1 tbsp coffee liqueur (optional)
  • 1 cups heavy cream (cold)
  • 1 cup mascarpone cheese (cold)
  • 0 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line muffin pan with cupcake liners.
  2. Whisk flour, cocoa, sugar, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk eggs, milk, oil, and vanilla.
  4. Combine wet and dry ingredients; mix gently.
  5. Pour in hot espresso and hot water; batter will be thin.
  6. Fill liners 2/3 full and bake 18–22 minutes. Cool completely.
  7. Mix cooled espresso, sugar, and liqueur for the soak.
  8. Brush espresso soak over cooled cupcakes.
  9. Whip cold cream to soft peaks, add mascarpone, sugar, and vanilla. Beat until fluffy.
  10. Frost cupcakes and dust with cocoa powder.
