- 1 cups all-purpose flour
- 0 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 tsp baking soda

- 2 eggs (large)
- 0 cup milk (whole)
- 0 cup vegetable oil
- 1 tsp vanilla extract
- 0 cup espresso (strong, hot)
- 0 cup hot water
- 0 cup espresso (cooled)
- 2 tbsp sugar
- 1 tbsp coffee liqueur (optional)
- 1 cups heavy cream (cold)
- 1 cup mascarpone cheese (cold)
- 0 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line muffin pan with cupcake liners.
- Whisk flour, cocoa, sugar, baking soda, baking powder, and salt.
- In a separate bowl, whisk eggs, milk, oil, and vanilla.
- Combine wet and dry ingredients; mix gently.
- Pour in hot espresso and hot water; batter will be thin.
- Fill liners 2/3 full and bake 18–22 minutes. Cool completely.
- Mix cooled espresso, sugar, and liqueur for the soak.
- Brush espresso soak over cooled cupcakes.
- Whip cold cream to soft peaks, add mascarpone, sugar, and vanilla. Beat until fluffy.
- Frost cupcakes and dust with cocoa powder.

- For a more intense chocolate flavor, consider adding chocolate chips.
